WThis is a simplified take on a cocktail from a new drinks list. It's a party-sized pre-mixed which is bursting with the essence of the Christmas time, rendering it excellent for your celebration. Save the extra citrus syrup for breakfast cocktails, sweets, or for another batch of this cocktail.

Serves 10 servings
For the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Premix (produces 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Directions
To prepare the Syrup: Put every ingredients in a pan, heat until it reaches a simmer, stirring until the sugar dissolves. After that, turn off the burner and let it to cool down fully. Pour into a sterilised bottle, cap it and store in the fridge, it will last for around a month.
Preparing the Cocktail Base: Combine all the spirits and syrup into a large bottle, let it rest for an hour, then pass it through preferably using muslin, to ensure it's fully clarified.
To serve: Add 85ml of the cocktail base into a mixing glass packed with ice, gently stirring lightly for one minute until cold. Pour into a chilled martini glass or a similar vessel, top with the cranberries and finish using a light spray of mandarin oil above the glass.
